The best restaurant POS is not the one with the most buttons. It is the one your team can operate quickly, on your equipment, through a connection failure, while preserving a clear record of every sale and correction.

01 · Real serviceRehearse your hardest hour, not the salesperson’s easiest demo.
Write down the five actions that genuinely slow your operation. In a café, that might be opening a table, adding an extra, moving the table, splitting the bill and cancelling an item after it reached the kitchen. In quick service, replace the table flow with takeaway, a modified meal deal and two preparation stations.
Load ten products from your actual menu with their modifiers and prices. Then hand the screen to a server or cashier. Measure completion time, but also record hesitation, backtracking and mistakes. An interface that feels fast to the person selling it may not be fast for the person touching it six hours a day.
02 · The outageDisconnect the network yourself and observe the entire recovery.
“Offline” can mean very different things. One system may keep the screen open but block payment. Another records a sale but stops kitchen printing. A third works on only one terminal. Turn off Wi-Fi or unplug the router during the demonstration instead of accepting the label.
Create an order, route it to preparation, change it, pay and print. Restore the connection. Confirm that the sale appears exactly once in reports, inventory is not deducted twice and no print job remains hidden in a queue.

Use two devices at the same time
Have a server edit an order on a tablet while the counter changes it too. Ask which version wins, where the conflict is shown and how the history explains the result. The objective is not to hide concurrency. It is to resolve it without a duplicate and with an audit trail.
03 · The counterTest the equipment that will run the real shift.
List every device before the meeting: tablet or PC, operating system, receipt printer, kitchen printers, cash drawer, scanner and customer display. Record model numbers and connections. “Compatible with thermal printers” does not prove that your exact printer, port and network are supported.

Ask what installation includes. Adapters, cabling, a second router or a kitchen terminal can change both budget and opening date.
04 · Real priceCalculate twelve complete months, not one isolated monthly fee.
First-year cost combines subscription, mandatory equipment, installation, menu setup, training, paid support and any fee per terminal or location. Require a quotation that separates every line and states what renews.
Simple formula: twelve-month cost = setup fees + 12 × monthly fees + predictable options. Add the cost of a lost service if hardware replacement depends on a provider who cannot intervene quickly.

If you are still preparing the premises, make this protocol part of the restaurant opening sequence. Test POS, network and printers during a service rehearsal, not on opening day.
05 · Your dataVerify entry, traceability and exit before you sign.
Request a test import of your menu and a test export of sales. Open the exported file. Dates, products, quantities, taxes, discounts, payment methods and identifiers should make sense without the original software. A backup the merchant cannot retrieve is not an exit plan.
Create a server role and a manager role. Check who can change a price, void a line, reopen a bill and view revenue. Make a correction, then find its author, time and reason in the audit history.
Ask about leaving on day one
Who owns the data? Which format is provided? How long can you access it after cancellation? Put the answer in the contract or terms, not only in the sales conversation.

Mark each test “passed”, “partial” or “not demonstrated”. A visible failure can be fixed. An unanswered area often becomes an expensive surprise after installation.

How much does restaurant POS software cost in Morocco?
Cost depends on locations, terminals, equipment, installation, kitchen functions and support. Compare the twelve-month total rather than a subscription number alone.
Is a tablet POS reliable enough?
It can be, provided sales, printing, synchronization and power were tested in your configuration. Screen format proves neither continuity nor network quality.
Can I keep my thermal printer?
Often yes, but protocol, connection and operating system must match. Print a real ticket on your model before deciding.
Should restaurant POS include inventory?
Yes when you need sales to consume ingredients. Check the depth: restaurants need recipes, units and waste, not just a finished-product counter.
How long should the trial take?
One prepared hour can eliminate systems that fail essential operations. A longer trial is still necessary to validate team habits and stability across several services.

This protocol is a purchasing guide, not a compliance certificate. For taxpayers within scope, articles 145 and 211 of the 2026 General Tax Code govern invoice or receipt sequencing and particulars and require sales copies and accounting records to be retained for ten years.
